Instructies
  1. Start by making the herbal mix: Finely chop the ginger, spring onion, lemongrass, chili pepper, coriander and lime leaves. Put them together in a large bowl and add the green curry paste. Mash the aromatics with a mortar so that the aromas can be released nicely.
  2. Mix half of the spice mix under the chicken mince. Also add an egg and the panko. Mix well and roll the meatballs off the meat. Steam the balls.
  3. Place the chicken fillets in a large bowl and add all the ingredients for the marinade. Let the chicken marinate for half an hour. Steam the chicken fillets for 20 minutes.
  4. Meanwhile, make the sauce: Heat a dash of coconut oil in a saucepan over the fire. Add the finely chopped onion, the remaining half of the spice mix and the cherry tomatoes. Deglaze with the rest of the coconut milk and the ketchup.
  5. Cut the steamed chicken into pieces and mix them with the sauce. Also add the meatballs and shrimp. Allow to heat for a few minutes before serving.
  6. Serve: Serve de Thai vol au vent with a puff pastry cookie and an salad of herbs.
