Instructies
Tempura banana
  1. Mix the flour, the corn starch and the baking powder. Add the ice water and stir into a smooth batter with a whisk.
  2. Heat the frying fat. Cut the bananas into rectangular bars and roll them through the tempura batter. Fry the bananas until they are golden brown. Drain on kitchen paper and sprinkle with lime zest.
Coconut mango salad
  1. Heat the coconut water and add the remaining ingredients. Allow to infuse.
  2. Pour through a strainer. Add a fine apple and mango brunoise to half of the couilis as well as the flesh of the passion fruit.
Lemoncream
  1. Combine the cream, lime zest and ginger syrup in a bowl and whisk the cream.
To serve
  1. Fill a glass with a few pieces of tempura. Add a little coconut mango salsa and finish with a scoop of lime cream and chopped psitach nuts.
